Layered Jello
4 3-ounce packages of Jell-O
1 14-ounce can sweetened condensed milk
4 packets unflavored gelatin
Water as directed
Spray a 9×13 pan with non-stick cooking spray and wipe out the excess with a paper towel. Set the pan aside.
Mix 1 package of Jell-O with 1 1/4 teaspoons (1/2 packet) of unflavored gelatin. Add 1 cup boiling water and stir to combine completely. Pour the first layer into the prepared pan and refrigerate in a completely level shelf of the fridge for 20 minutes.
While the first layer is setting, mix 1 cup boiling water with the can of sweetened condensed milk in a smallish-medium mixing bowl. Set aside.
In a small bowl, sprinkle 2 packets of gelatin over 1/2 cup cold water. Allow it to stand for 2-3 minutes or until the gelatin has absorbed the water and it becomes grainy. When it is ready, add 1/2 cup boiling water and stir until the gelatin is completely dissolved. Add the dissolved gelatin mixture to the sweetened condensed milk mixture and stir completely. Allow to come to room temperature.
When the first layer of Jell-O has set, carefully pour 1 cup of the sweetened condensed milk mixture over the Jell-O layer and return the pan to the refrigerator. Chill for 15 minutes or until set.
After you return the pan to the refrigerator, repeat the Jell-O step (1 package Jell-O + 1 1/4 teaspoons unflavored gelatin + 1 cup boiling water). If you do it immediately after you put the pan back in the fridge, it should be room temperature by the time the sweetened condensed milk layer has set up. Pour it over the milk layer, chill, repeat with milk, then Jell-O, then milk, then Jell-O. You should begin and end with Jell-O layers and have 4 layers of Jell-O with 3 layers of milk in between. As you go, if the milk begins to set up, place the bowl in a larger bowl or a shallow pan and add some hot water to the larger pan/bowl to keep the milk mixture from setting up.
When the last layer has set up, carefully cut into cubes or use a cookie cutter to cut into shapes. If you run the cookie cutter or knife under hot water for a few seconds and then dry it, it will help make pretty final cuts/shapes.

Risotto
1 T butter
1 small or 1/2 medium onion, minced
3 cloves garlic, minced
1 pound Arborio rice
7 to 8 c chicken broth
1 c heavy cream
2 cups (total) grated Parmesan, Romano, Asiago or Swiss cheese
Salt & Pepper to taste
Chopped chives
Heat oil and butter in large skillet, then add chopped onion and garlic and cook until soft. Dump in 1 pound dry Arborio rice, and stir to coat. Then add the broth, in 1-cup increments, stirring after each addition until liquid is absorbed (add one cup broth, stir until liquid is absorbed, then add another cup, etc.) This takes about 20-30 minutes. Rice is done when it no longer has a hard bite. After all liquid is absorbed, add cream, cheese, salt & pepper, and stir to combine. Stir in chives and serve immediately.

Asian Pasta Salad
1/3 cup canola oil
1/4 cup plus 1 tablespoon soy sauce
2-3 T sesame oil
1/4 cup plus 1 tablespoon honey
3 tablespoons rice wine vinegar
2 red, yellow or orange bell peppers, diced
1/2 red onion, diced
2-3 cups of rotisserie chicken, cut into bite sized pieces (put more chicken if you want it meatier)
3 tablespoons toasted sesame seed
3 cups washed baby spinach
Boil and cook pasta. Make sure to salt the cooking water. Drain pasta and set and rinse with cold water. In a separate bowl combine oil, soy sauce, sesame oil, honey and rice vinegar until well blended. In a large bowl combine pasta, peppers, onion, chicken and spinach. Toss with the sauce until well combined. Sprinkle with toasted sesame seeds. Keep in fridge until ready to eat, or serve immediately, either way is delicious.

Homemade Biscuits
1 1/2 t. salt
1 T. sugar
1 1/2 t. baking powder
1 stick butter
3/4 c. buttermilk (If you don’t have buttermilk, you can use 3/4 cup milk + 2T lemon juice.I
1 egg
1/4 c. water
Preheat oven to 425 degrees. Combine flour, salt, sugar, baking powder and butter until crumbly. Mix in buttermilk, egg and just enough water to make a workable dough. Mix the dough until it is just barely combined (don't over mix). Roll the dough onto a floured cutting board about 1 inch thick. Cut with a 2 inch biscuit cutter, or a 2 inch round cup. Place on a greased baking sheet (touching each other) and bake 12-15 minutes or until golden brown. Makes about 12-15 biscuits, depending how thick you make them.
Tips to making awesome biscuits:
*ONLY hand mix your dough. Don't mix in a Bosch or with a hand mixer. The dough will be too tough and the dough will become dry if you use a mixer. You don't want to over mix this recipe. The best way to mix this dough is with a pastry cutter or using two knives and cutting the dough back and forth. This method takes a little longer but will ensure the perfect biscuit. You want pieces of butter left in your biscuit, that is what keeps the dough light and flaky.
*Next tip is to keep your biscuit dough fairly thick. You want a tall and thick biscuit more than you do a thin and hard biscuit. Keeping the dough thick will ensure a chewy and soft biscuit. I keep my dough about 1 to 1 1/2 inches thick (cooking times may vary depending how thick you make them).

Garlicy Oven Fries
I love a good french fry. These were so tender in the middle and crisp on the outside - just what a fry should be. The whole fam loved these. And I'm thinking about just keeping garlic olive oil on hand now...so clever.
8 garlic cloves, minced
6 tbsp extra virgin olive oil
3 russet potatoes (about 8oz each), each cut into 12 wedges
3 tbsp cornstarch/cornflour
1 1/2 tsp coarse sea salt
1 1/2 tsp freshly ground black pepper
½ tsp garlic powder
Preheat oven to 440° F. Combine the garlic and oil in a large bowl, warming it until the garlic is fragrant, about 1 minute (I actually just combined the oil and garlic in the morning, covered it and let it sit all day). Add the potatoes to the garlic mixture and toss to coat. Place in a 8x8 baking dish. Wrap tightly in plastic wrap and microwave on high power until the potatoes are translucent around the edges, 3 to 6 minutes, shaking the bowl to redistribute the potatoes halfway through cooking.
Combine the cornstarch, salt, pepper and garlic powder in a small bowl. Sprinkle over the hot potatoes and toss well to coat.
Arrange the potatoes in a single layer on the prepared baking sheet and bake, turning once, until deep golden brown and crisp, 30 to 40 minutes.
Serve with ketchup, mayo or sour cream.

Cream Cheesy Mac and Cheese
4 T butter
3 T flour
2 cups milk
1 (8oz) package cream cheese
2 cups shredded sharp cheddar cheese
Parmesan cheese
Salt and Pepper to taste
Preheat oven to 400°F.
Cook pasta according to package directions. Drain and keep warm until sauce is ready.
For the sauce, melt butter over medium heat in a large saucepan or deep pan. Add flour to the butter and stir until smooth. Gradually add in milk, stirring continuously. Allow milk mixture to come to a boil and cook for 2 minutes, stirring continuously.
Reduce heat to low and add cream cheese, cheddar cheese, salt, and pepper. Stir until cheeses are melted and sauce is smooth. Pour the sauce over the elbow macaroni and mix together.
Pour mixture into greased, large casserole dish. Sprinkle a small amount of cheese over the top. I used grated Parmesan and cheddar. Broil until cheese is bubbly and browned.

Southwest Pasta Salad
1 (14oz) can black beans, drained and rinsed
2 roma tomatoes, diced or about 3/4 C or halved cherry tomatoes (I actually used canned petite diced tomatoes cause I had it - delish)
1 large red, yellow, or orange bell pepper, diced
1/2 cup sliced green onions
1/2 cup frozen fresh corn
zest from 2 limes
optional: 8 oz diced cooked chicken
1/2 cup shredded pepper-jack cheese
Dressing:
6 Tbs fresh lime juice (about 3 juicy limes)
1/4 cup seasoned rice vinegar
4-5 cloves garlic, roughly chopped
1 1/2 tsp chili powder
1 tsp cumin
1/2 tsp coriander (I didn't use this)
1/2 tsp kosher or sea salt
2 tsp sugar (add a touch more if your limes are extra sour/bitter)
3/4 cup canola oil
1/2 cup roughly chopped cilantro
Boil pasta in salted water until cooked. While it's cooking, prepare dressing.
First zest your limes and place the zest in a large salad bowl.
Place the lime juice, vinegar, garlic, chili powder, cumin, coriander, salt and sugar in a blender. (Basically everything except the cilantro and oil) Process until smooth. With the motor running slowly, add the oil in a steady stream until incorporated. Add the cilantro and pulse so it gets broken up, but some pieces still remain in tact.
When pasta is done cooking, drain and rinse immediately with cold water to cool. Place the pasta in the large salad bowl with the lime zest. Add black beans, tomatoes, diced pepper, green onions, corn (no need to thaw the corn), and chicken if desired. Toss with dressing. Taste, and add additional salt and pepper to taste. For best results, chill for 1 hour before serving. Right before serving, sprinkle cheese on top. Serve with extra lime wedges if desired.

Restaurant Style Salsa
1 (28oz) can whole tomatoes with juice
2 (10oz) cans Rotel tomatoes
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno diced (I omitted this because I'm super wimpy with spicy food - keep in mind that the Rotel has some heat of it's own)
1/2 t salt
1/4 t garlic salt (my addition)
1/4 t sugar
1/4 t cumin
1/2 cup cilantro, chopped
1/2 whole lime juice
Dump everything into a food processor. Pulse until desired consistency is reached. Test for seasonings. DONE!! Refrigerate at least several hours.

Fettuccine Alfredo
1 stick butter
1 cup heavy cream (I used half and half)
1 lb Fettuccine noodles
2 cups Parmesan cheese
salt and pepper to taste
Cook pasta according to package directions.
In a saucepan or skillet, warm butter and cream. Season with salt and freshly ground black pepper.
Grate Parmesan cheese and place half of it into a large serving bowl. Pour warm butter/cream mixture over the top.
Drain pasta and immediately pour it into the bowl.
Toss a couple of times, then sprinkle in the other half of the Parmesan.
Toss to combine, thinning with pasta water if necessary.
Serve immediately as a main course or accompaniment to meat or salad.

Baked Broccoli
I'm always looking for new ways to eat vegetables since Bryce and Justin both STRUGGLE with eating them! This was just the ticket. The broccoli was perfectly cooked...not to crisp but not too soggy - perfection. The flavor is just so awesome. Trust me...just try it!
2 heads broccoli
3 T olive oil
1 t dried oregano
1/2 t dried garlic powder or 1 t fresh minced garlic
15 whole Ritz crackers
1/2 t salt
1/4 t pepper
1/4 cup fresh grated parmesan cheese
Preheat oven to 400 degrees.
Cut broccoli into florets and rinse. Place crackers in a Ziploc bag and crush. Add the oregano, garlic powder, salt, pepper and parmesan cheese to the bag. Mix around. Add the broccoli and the olive oil to the bag also. Mix around until the broccoli is evenly coated. Place in a baking dish or cookie sheet. Put in the oven for about 20 minutes, stirring once halfway through. If the broccoli is still too firm for your taste, keep in oven in 5 minutes increments until your preferred crispness is reached. Enjoy!

Spanish Rice
1 T butter
2 cloves garlic, minced
1 1/2 c uncooked rice
2 1/2-3 c chicken broth
1 c chunky salsa
Heat butter in a large skillet. Add garlic and saute for 1-2 min. Stir in rice. When rice BARELY begins to turn a very light golden brown, stir in chicken broth and salsa. Bring to a boil. Reduce heat to low and place a tight fitting lid on top and simmer for at least 25 min. or until all liquid is absorbed and rice is cooked through.

Sour Cream Rice
1 (14 oz) can chicken broth
1 cup sour cream
1 (4oz) can diced green chilis
1 cup shredded Monterey Jack cheese, divided
1 (8 oz) can corn, drained
Salt and pepper to taste
In a large pot, bring the rice and chicken broth to a boil. Reduce heat to low, cover and simmer 20 minutes or until fully cooked.
Preheat oven to 350 degrees. Lightly grease a 1 1/2 quart casserole dish.
In the pot with the cooked rice, mix the sour cream, green chili peppers, 1/2 cup Monterey Jack cheese and corn. Season with salt and pepper. Transfer to prepared casserole dish, and top with remaining cheese.
Bake uncovered for 30 minutes until cheese is bubbly and lightly browned.

Simple Sesame Noodles
12 ounces thin noodles, cooked and drained (angel hair, thin spaghetti, or Asian style)
1/4 cup soy sauce
2 tablespoons sugar
3 to 4 cloves garlic, minced
2 tablespoons seasoned rice vinegar
2 to 3 tablespoons pure sesame oil
1/2 teaspoon hot chile oil (I didn't use this)
4 to 5 tablespoons canola oil
2 tablespoons hot water
3 to 4 green onions, sliced thin (if you have them)
Whisk all ingredients (except noodles and green onions) together in a bowl. Taste and adjust ingredients as needed.
Pour sauce over warm noodles and toss to coat.
Sprinkle with green onions and toss.
Serve in a bowl with chopsticks. Yummy!

Pot Roast and Asian Green Beans
3 cans cream of mushroom soup
1 packet Lipton Onion Soup mix
milk to thin
In a bowl mix cream of chicken soup, onion soup mix and enough milk to be stirable (you know...like 1/4-1/2 cup.) Pour over roast and put in a crock pot for 8 hours. By the time it's done, the meat should be shredded goodness and you have instant gravy for mashed potatoes. You can also add a little Kitchen Bouquet - a little secret I use to thicken, brown and season the gravy...if you haven't tried it...DO IT!! Enjoy a simple, easy dinner!
Asian Green Beans
1/2 lb fresh green beans
2 T hoisin sauce
2 T soy sauce
2 t minced garlic
1 small shallot, minced
olive oil
In a skillet, heat olive oil and add shallots. Cook 2 minutes. Add green beans and 3 T water. Allow green beans to steam until liquid is absorbed. Meanwhile, in a bowl mix hoisin sauce, soy sauce and garlic. Add to green beans and saute till thick and beans are coated well. Enjoy!!
*If you haven't tried hoisin sauce...it's a MUST! Trust me! It's a classic Asian flavor.

Onion Strings

Slice onion very thin. Place in a baking dish and cover with buttermilk for at least one hour. Combine dry ingredients and set aside. Heat oil to 375 degrees. Grab a handful of onions, throw into the flour mixture, tab to shake off excess, and PLUNGE into hot oil. Fry for a few minutes and remove as soon as golden brown. Repeat until onions are gone. Eat before your family sees them. Repeat with another onion, because they’ll be really mad they didn’t get any.
